Who doesn’t crave a big bowl of comfort food on days when it’s cold and grey?

Thankfully, healthy slow cooker recipes are pretty easy to make. You prep the protein, sturdy vegetables and carbs of your choosing, add liquid like broth and just let them simmer in your Le Creuset pot on the stove for a few hours.

Slow cookers like the Crockpot are especially spoonie-friendly. You don’t have to keep an eye on your pots and pans, which makes it less taxing mentally and physically than regular cooking. What’s more, you can prep the ingredients ahead of time on days when you feel relatively good. Then, whenever you’re busy or sick, you simply heat one of those freezer meals in your slow cooker. And of course with a big enough Crockpot, you can make double batches. One day of cooking, two meals!
